The Perfect Fall Cookies

What's Thanksgiving without cookies? Learn how to bake these twists on the classics this fall season

Cookies go well with any event or season. They make for perfect delightful treats for winter, summer, and spring. But autumn cookies give you that warmth, along with the crisp flavors of fall. They go flawlessly with the cozy season, whether your tastes are for delicious apple pie cookies or pumpkin and pecan cookies.

Pecan Cookies

Pecan cookies are some of the best cookies to make if you're going for that thin but chewy bite with hints of brown sugar. They make for perfect snacks at home- or on the go. The ingredients you’ll need are:

½ cup of butter

1 ½ cups brown sugar

1 egg

½ tsp of vanilla

1 ½ cups of flour

1 pinch of salt

1 cup of pecans.

A tip for the pecans would be not to over-chop them. Just coarsely chopping them up to ensure you still get good chunks of the pecans in your cookie is the best way to get the full crunch and flavor. You would want to start by creaming the butter, sugar, and the egg while also adding the vanilla to create a fluffy mixture. After you have sifted the flour into the same bowl, combine it all with a spatula- or wooden spoon. When you’re done chopping your pecans up, add them to your batter and gently fold them into it. If you want a better finish, leave the batter out for 1 hour or overnight in the fridge. Then, roll them up into 1-inch balls and place them onto a cookie sheet. Flatten them with a glass- or any round object. Then pop them into the preheated oven at 350F, and let them cook for 12 minutes- or until they're a light brown color. Cool before serving and enjoy!

Apple Pie Cookies

Apple pie is a staple in autumn. With the cinnamon sugar taste, along with crisp apples, and the dough as the perfect addition to wrap it all up- it creates the perfect pie for the season. But wouldn’t it be great if you could have that in cookie form? Apple pie cookie dough requires:

1⁄2 cup of butter

½ cup of sugar

1 large egg

1 ½ cups of all purpose flour

1 tsp of baking powder

½ tsp of vanilla

1 pinch of salt

To begin, whisk the flour, salt, baking powder, and sugar until combined. Then, make a pit in the middle of your dry ingredients, so then you can add the egg, butter, and vanilla into the hole. While mixing with a fork, slowly incorporate some flour into your wet ingredients until it becomes a dough you are able to knead. Knead the dough until it's soft- and everything is well combined. Wrap your dough up in plastic wrap- and keep it refrigerated for about 30 minutes. During the waiting period, peel your two apples, cut them to the core, and then dice up your slices. The ingredients for the filling are

1 ½ tbsp of butter

½ - 1 tsp of cinnamon

In a pot, add in all your ingredients, mix them up, and cook them at a low to medium heat. Make sure to keep an eye on the mixture and stir occasionally. You still want the apples to be whole and not mushy. Cook until the apples are tender, then take the mixture off the heat. To assemble your cookie, you will first need to take the dough out from the fridge- and use any round cookie cutter you please to make the shape of your cookie. Next, take a teaspoon of your apple filling- and place it on one of your cookie pieces. Make sure not to go over the edge. Then, take another cookie piece, and place it on top of the one you put filling on. Wet your fingers with water to press the edges shut, and brush the top with some milk. For the cinnamon sugar to put on top too, you'll need:

2 tbsp of granulated sugar

½ tsp of cinnamon.

After sprinkling that on, put it in your oven, which should be preheated at 350F, and let it bake until golden brown for 15 minutes. Pair it with anything you like, and dig in!

Chocolate Chip Pumpkin Cookies

Of course, what's the season of fall without pumpkin! Pumpkin pie is a classic, and is usually what comes to mind when thinking of autumn. But let's switch it up a little. Chocolate chip pumpkin cookies are perfect for this time of year, and a fun thing to try! You will need:

1 cup of softened butter,

¾ cups of sugar,

¾ cups of brown sugar,

1 egg

2 tsp of vanilla extract

2 cups of all purpose flour

1 cup of quick cooking oats

1 tsp of baking soda

1 tsp of ground cinnamon

1 cup of canned pumpkin

1 ½ cups of semisweet chocolate chips

Start with creaming the butter and sugars in a bowl until light and fluffy. Add the egg and vanilla in, and beat them into your mixture. Next, add in your flour, oats, baking soda, and cinnamon. Stir everything together until it's combined, or until you don't see any flour left. Then, add in your chocolate chips and gently fold them into your cookie dough. Lay out your cookie sheets, scoop out roughly a tablespoon of dough, and drop it onto your sheet. Put them into the oven- and bake them for 12-13 minutes, or until they've lightly browned. Let them cool on a wire rack- and relax- as you enjoy this delightful treat in the cool times of fall.
