Chimichurri is a vibrant, uncooked herb sauce from Argentina & Uruguay, typically made with finely chopped parsley, garlic, vinegar, and oil. It is famously used to season grilled meats (asado), cut through rich, fatty juices, and add a glossy, herbaceous punch to any dish. Where did the name come from? One of the most popular urban legends claims the sauce was invented by a 19th-century Irish meat trader named "James McCurry (or Jimmy Curry)". According to the tale, the locals had trouble pronouncing his name, and it eventually morphed into chimichurri. The most widely accepted theory, however, links it to the Basque immigrants who settled in Argentina. The name likely evolved from the Basque word tximitxurri, which loosely translates to "a mixture of several things in no particular order."
