China is vast and has abundant resources. There are many provinces, each with its unique cuisine. Today, we’ve come to a newly opened Fujian restaurant called “Ju Can Yuan” and tried out its delicious food. When we went into the restaurant, the boss came to us enthusiastically. She is from Fujian and her fluent Fuzhou dialect made us feel nostalgic.

We ordered coconut juice with Kung Pao Chicken, Li Chi Spare Ribs, Flat Pork, and Noodles. First, Kung Pao Chicken is a Chinese-style stir-fried chicken nugget that is salty and slightly spicy. The main ingredients are chunks of boneless chicken and peppers. Peanuts and peppers bring the dish together and give it an eye-catching color.

Secondly, Li Chi Spare Ribs, a.k.a lychee meat, is a special traditional dish in Fuzhou City, Fujian Province, and other places. This dish goes back two or three hundred years. Among its ingredients are pork and potatoes. They are fried until golden and then topped with sauce. The sauce has a sweet and sour flavor. It is named after the lychee-like appearance.

The last one is Flat Pork and Noodles, a combination of soup and noodles. Fuzhou people usually eat it for breakfast. The first step is wrapped in minced pork paste and cooked into soup. Next, spread the special sauce on the plate and place noodles on top, then the customer mixes it themselves. The savory sauce with the meat has a salty and sour taste. It tastes very refreshing and not greasy.

There are many specialties in Fujian, China, which have been passed down for hundreds of years. Every delicacy is a unique gift that not only satisfies our taste buds but also connects people regardless of any differences.
