Healthy Homemade Cranola Bars

Ingredients:
2 cups old fashioned rolled oats
½ cup raw ground pumpkin or seeds of choice
⅓ cup honey
1 tbsp butter
3 tbsp coconut oil
¼ cup coconut of regular sugar
½ tsp vanilla extract
2 tbsp chia seeds
A pinch of salt
⅓ cup dried cranberries or dried fruit of choice
¼ cup chocolate chips
Method:
Preheat your oven to 375 degrees. In a baking pan, add rolled oats and ground pumpkin seeds. Toast for 10-12 minutes in the oven, until fragrant. Shake the pan to mix the oats and seeds and toast for 2 more minutes.
While oats and seeds are in the oven, add honey, butter, coconut oil, sugar, and vanilla to a small saucepan and melt the ingredients down, being careful not to burn them.
Add oats and seed mixture to a mixing bowl and add the melted butter mixture. Add the salt, dried fruit, and chia seeds. Mix until well combined. Allow to cool for 3-5 minutes.
While cooling, line a square baking pan with tin foil or parchment paper. Lightly coat tinfoil with coconut oil to prevent sticking.
Add chocolate chips to the mixture and stir until evenly combined. Using your hands, press the mixture down onto the baking pan evenly. Take additional chocolate chips and sprinkle on top. Press down one more time evenly.
Cover and refrigerate for at least 2 hours. Peel off foil and cut into bite or bar size pieces. Will store for up to a week or individually wrap and freeze.
