I'm Natalia, and I love food, especially making it! This portfolio is a showcase of food I've cooked or baked, videos I've recorded, and pieces I've written on anything from how I use food as a vehicle for love to reviews of my favorite restaurants.
Initially, I made this website for my Food in Literature class at Staples High School, a two-period combination between English and Culinary. Each week (until school was closed due to the pandemic), we would choose a recipe based on a challenge, cook it, and write a blog about that dish incorporating themes learned in English class. Our recipes required a central theme, as well, and mine was vegetarian cuisine. For more than five years, I've been a pollo-pescatarian, which means that I don't eat mammals. I care deeply about climate change and sustainability, and there is increasing evidence that the consumption of meat products at the rate that we are currently proceeding will not be a feasible way to protect the Earth. Since school shut down in March, I've continued to document what I cook up at home too! The result is a mixture of writings, videos, and pictures exhibiting my passion for food.
"The transformation of the egg whites to stiff peaks was magical. They began as a soapy glob that could never be considered appetizing, but as the metal blades swiped through them, they brought more and more microscopic volume in between the molecules of egg. Almost too quickly to see, the mechanical whip crammed air into the egg whites to create something to be admired, and even when it seemed like there was no way to make them look any better, the whites surprised me with their ability to accept whipping. The once-slippery bubbles that grew in numbers brought shine to the mixture that created a smooth, glossy finish."

Just like the understated flavor of the cake, my love may not be overtly pronounced, and it may not coat your throat like the strong flavors of rich chocolate or orange, but it gently whispers its existence in a way that is sweet and compassionate. It’s easily digested, but not easily forgotten."
