LEVEL 2 HOSPITALITY – L2HOS

This course is designed as an introduction to working in the hospitality industry. The focus at Level 2 is on cookery and associated skills relevant to the industry. Students work in a simulated hospitality environment with time pressure and high expectations for food quality and presentation. The majority of assessments require both practical and bookwork components.

Food safety in a food business
Handle and maintain knives
Cook food by grilling
Prepare and present salads
Prepare fruit and vegetable cuts
Cook food items by frying
Prepare basic sandwiches
Cook food items by baking
Compare characteristics and prepare and present international dishes

Entry Recommendations: Priority will be given to students who have successfully completed Level 1 Hospitality and are able to work productively in small groups and contribute to whole class discussions.
