Our goal in Foods Class is to introduce students to foods they might not try elsewhere, teach them to make real food and why they should not eat processed food, and teach simple recipes and skills that will make everyday cooking more flavorful.

We do what we do because I love food and cooking for others. I know we live in a world of calorie counting, intermittent fasting, etc. The enemy is not food. The enemy is processed food.

Ratatouille is a French dish made from late harvest vegetables. It is technically a stew made with fresh herbs and a tomato base. It tastes best served at room temperature.
This recipe is actually Anthony Bourdain's.
We sauté our chicken and eggplant in olive oil. Make sure the oil is hot before adding the chicken, and season liberally with fajita seasoning 2-3 times as the chicken cooks.
There really is no substitute for Hidden Valley Ranch seasoning
