Hospitality and Tourism ‘aka’ The Underground Café

At Saunders S.S. we are fortunate enough to have a Commercial Teaching Kitchen with industrial cooking equipment and hand tools as well as a classroom that doubles as a dining room. This facility has guided our program towards a model where our students prepare and cook food for paying customers under our “Underground Café” label. Using local and carefully sourced ingredients, standardized recipes, and fine culinary and baking techniques, students prepare food for our Dollar Menu, weekly a la carte lunches, caterings, and Food to Go programs. Chef Rosen is a Red Seal Cook, Chef Snively is a Red Seal Baker. They bring to our teaching kitchen an enthusiasm for the creation of all things food and many years' of experience working in Fine Dining Restaurants, Custom Cake Shops, Hotels, Bakeries, Resorts, and Golf Clubs.

Grade 10 Hospitality and Tourism

This course is a great introduction to the Underground Café where students learn kitchen safety, culinary terminology, cooking methods, measurement and apply this knowledge while cooking food for our customers.

Grade 11 Hospitality and Tourism College and Workplace

In this class our students have the opportunity to take the ‘Safe Food Handlers Certification” through the London Middlesex Health Unit. They learn about taste and flavour, local food and sustainability, knife skills and cooking techniques. In Grade 11 the students are in the kitchen 65% of the time and in the Classroom 35% of the time

Grade 12 Hospitality and Tourism College and Workplace

In this class our students spend most of their time preparing food. This class is usually scheduled just before lunch so that the Grade 12’s can put the finishing touches on the food prepared for our lunches and catering.

Students learn about menu composition and we look more closely into how to source local foods.

Grade 11 Hospitality and Tourism – Baking Emphasis

In this introductory baking class, students will build an understanding of mixing methods through production of Basic Breads, Cakes, Cookies, Pastries, and all things sweet. Students will also earn their ‘Safe Food Handlers Certification” through the London Middlesex Health Unit and start their exploration of decorating techniques and trending baked goods. This course is a hands-on experience that has students working with product for the bulk of their in-class time .

Grade 12 Hospitality and Tourism – Baking Emphasis

In this next level baking class, students get to further exploring building their baking skills and talents. They will develop an understanding of Artisan Breads, Cake Decorating, Pastry and Confectionary work. Practice with plating, decorating and bulk production techniques gives students the opportunity to explore the next level of this exciting industry. This course is a hands-on experience that has students working with product for the bulk of their in-class time.
