If you were to look at any digital file, no matter whether its destination was a word processor, image-editor, database, web-browser or other software, all you would see would be 1s and 0s.
Its up to the software application and the hardware to interpret theses 0s and 1s. Most computers have a text-editor which will interpret any string of binary code as text. If you try to open other file types with them you will usually see strange characters.
Open any .jpg using your text editor.
Right-click, Open With, Other...
Make sure Always Open With is OFF
Select TextEdit (notepad on Windows)
Delete a small chunk of the text. Hit File - Duplicate: File - Save: Rename the duplicate as test.jpg. Open this file. What do you notice?
Look for a frequently occuring character string in the test.jpg. and use Find and Replace with something of the same length. Save and open. What do you notice.
