Challenge #6: Rice Wraps (with Mikayla)
Ingredients:
1/2 cucumber
3-5 green onions
2 carrots
1 red pepper
1 avocado
1-2 cups bean sprouts
1 mango
oil (for the pan)
2 eggs
1/4 - 1/2 cup fake crab (or real crab or shrimp)
rice wraps (in the international foods aisle)
2-4 Tbsp peanut butter
1/4 - 1/2 tsp soy sauce
about 1 tsp sesame oil
2 Tbsp - 1/4 cup water
sriracha, to taste
sweet chili sauce
Instructions:
Thinly slice all vegetables except carrots.
Grate carrots.
Break crab into small pieces for the wraps.
Beat together two eggs.
Heat a non-stick pan with a bit of oil over medium-high heat.
When the pan is hot, pour in eggs so they cover the bottom of the pan, and cover with a lid until cooked.
Slice cooked eggs in half and then into thin strips.
For peanut sauce, mix together peanut butter, soy sauce, sesame oil, and water. Keep stirring and adding water until you get the consistency you want. Add some sriracha sauce if you like.
Boil some water.
Pour boiled water into a clean frying pan or bowl. Add enough cold water that you can touch the water without burning your fingers!
To assemble, place a rice wrap in the hot water until it becomes very soft.
Put softened wrap on a plate and load up with sauce, veggies, and protein.
Roll up burrito style.
If you want to, garnish with sesame seeds.
Challenge #5: Homemade Linguine with Bacon and Mushroom Béchamel (with Aaron)
Ingredients:
Linguine
Around 2 cups flour
2 eggs
1-2 tsp oil
Sauce
oil
bacon
mushrooms
butter
garlic
flour
milk
cheese
salt and pepper, to taste
citrus juice
Directions:
Make a well in the flour.
Pour eggs and oil into the well.
Form into a ball and knead for 10 minutes.
Wrap dough in plastic wrap and let it rest for 30 minutes.
For the sauce, cut bacon and mushrooms into pieces and fry with a bit of oil.
Transfer cooked bacon and mushrooms into a bowl.
In the fond (the base/drippings left from frying), add some butter and garlic.
Add some flour to the sauce to create a roux.
Add milk to the roux and simmer until starting to thicken.
Stir in cheese, bacon, mushrooms and a wee bit of citrus juice. Keep warm.
On a floured surface, roll out half of the dough to 1/4 inch thick.
Laminate dough to make it stronger and square.
Roll dough until it is very thin.
Gently fold the dough over on itself.
Cut into strips using a slicing motion, not pressing straight down.
Separate noodles.
Boil noodles in salted water about 1-2 minutes, until cooked.
Drain and serve with sauce.
Bonus French Challenge : Mousse au Chocolat
Ingrédients :
50 g de chocolat (1/3 tasse)
2 oeufs
Méthode :
Séparer les oeufs.
Battre les blancs jusqu'à neige ferme.
Faire fondre le chocolat dans un bain-marie.
Un à la fois, ajouter les jaunes d'oeufs au chocolat et remuer.
Doucement, mélanger les blancs dans le chocolat.
Verser dans les petits bols.
Mettre au frigo pendant 2 heures.
Challenge #4: Gnocchi
Ingredients:
Gnocchi:
2 potatoes (3 small)
1 tsp salt
2 cups flour (I used less in the video, but had to add a lot more!)
1 egg
olive oil, for frying
Sauce option #1:
2-4 Tbsp fresh basil
1-2 Tbsp parmesan cheese
Sauce option #2:
1 onion
1-2 Tbsp olive oil
1 cup tomato sauce
1/4 cup Caesar dressing
pepper, to taste
Directions:
Gnocchi:
Wash and peel potatoes.
Cut into 1- to 2-inch cubes and boil until you can pierce them easily with a fork.
Drain potatoes.
Mash potatoes.
Mix in salt, flour, and egg, and stir to combine.
Knead gnocchi dough until smooth.
On a floured surface, roll dough into snakes and cut into 1-inch pieces.
Boil pieces of dough until they float.
Scoop out cooked gnocchi and drain in a colander.
Fry gnocchi in olive oil until a bit crispy on the outside.
Serve with sauce.
Sauce option #1:
Cut basil chiffonade-style.
Sprinkle basil and parmesan cheese on fried gnocchi.
Sauce option #2:
Cut onion and sauté in olive oil.
Stir in tomato sauce and Caesar dressing and bring to a simmer.
Serve over cooked gnocchi with freshly ground black pepper.
Challenge #3: Sheet Pan Dinner
Ingredients:
a variety of vegetables that can be roasted
Sausage/chicken breast/other meat (optional)
1-2 Tbsp oil
1-2 tsp basil
1-2 tsp oregano
1-2 tsp chili powder
Directions:
Wash and peel vegetables.
Preheat oven to 400° F
Chop vegetables into bite-size pieces. (Try different shapes to add variety!)
In a bowl, mix chopped root vegetables with oil and spices.
Roast root vegetables and meat on a cookie sheet for 15 minutes.
Add the other vegetables and stir.
Roast 15 more minutes.
Add any leafy greens and roast 5 more minutes.
Enjoy!
Challenge #2: No Knead Bread
Ingredients:
3 cups flour (white, or a combination of multigrain and rye)
1 1/2 tsp salt
1/2 tsp yeast
1 1/2 cups flour
1 1/2 cups water
Optional herbs for savoury herb bread:
1/4 cup parsley
1/2 tsp garlic
1/2 tsp thyme
1 1/2 tsp basil
1 1/2 tsp oregano
Directions:
Mix dry ingredients together in a bowl.
Add water and stir.
Cover for 8-36 hours (12-24 hours is best).
Preheat oven and oven-safe dish with lid to 450° F.
Form dough into a ball, using flour to keep dough from sticking to your hands and the counter.
When oven is preheated, place dough in pan, cover with lid, and bake for 30 minutes.
Remove lid and bake for 15 minutes more.
Let bread rest for a few minutes, then slice and serve.
