Gayl’s Oil Cookies (Sugar Cookies)
Preheat oven to 177 degrees celsius
In a large mixing bowl, blend all ingredients together:
⅔ cup Canola Oil
¾ cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon salt
2 eggs, beaten
In a large mixing bowl, blend all dry ingredients together; now mix them into the Oil/Sugar mixture.
2 ½ cups flour
2 teaspoons baking powder
½ teaspoon ground Nutmeg
½ teaspoon ground Cinnamon
¼ teaspoon ground Allspice
If dough is too sticky to gather into a ball, add 1 tablespoon of flour at a time until you can gather the dough into a ball. If dough is too dry, add 1 tablespoon of milk until you can gather all of the dough into a ball.
Divide the cookie dough ball in half. Use a rolling pin to roll out ½ of the cookie dough on a very well floured surface. Sprinkle flour on top of the dough so the dough doesn’t stick to the rolling pin. Gently roll out the dough until it is about ¼ inch thick.
Use Cookie cutters of your choice to cut out cookies. Transfer cut out cookies to a parchment lined cookie sheet. Repeat the process and gather up scraps of cookie dough and mold into a ball, roll out and use cookie cutter to cut out more cookies.
Bake cookies for 8-10 minutes or until just lightly browned.
Cool on a wire rack. Frost cookies with icing sugar frosting and decorate with sprinkles, etc. if desired. ENJOY!
For cookie icing, blend together with hand mixer or heavy whisk:
⅓ cup butter
4 ½ cups powdered sugar (icing sugar)
3 tablespoons milk
1 teaspoon vanilla extract
¼ teaspoon almond extract (if desired)
