Cranberry Orange Scones
Preheat oven to 190 degrees celsius.
Put all into a large mixing bowl and blend together:
2 cups flour
⅓ cup sugar
2 ½ teaspoons baking powder
½ teaspoon salt
Grate (onto the top of the flour mixture) and then blend in with a fork just until butter is coated with flour mixture:
½ cup of frozen salted butter
Put all into a mixing bowl and blend together:
½ cup milk or cream
1 egg, beaten
2 teaspoons orange zest
2 teaspoons vanilla extract
Add egg/milk mixture to dry ingredients and blend in until fully incorporated. Then, use your hands to form a ball. Use floured hands or add a little bit of flour if needed because dough is too sticky.
Divide dough into halves, and on a lightly floured surface make each into a disc about 5-6 inches across and ¾ of an inch thick. Cut each disc in half and then in half again to make 4 equal scones from each disc.
Place scones on parchment covered baking sheet - brush with milk/cream - and sprinkle top with a bit of coarse sugar.
Bake 20-25 minutes or until golden brown. Cool on rack for 10 minutes (leave them on the parchment) and then drizzle with Orange Glaze in a zigzag pattern across each scone.
Glaze (blend together in bowl):
1 cup icing sugar (powdered sugar)
1 ½ - 2 tablespoons fresh orange juice
