Russian Teacakes (or Snowball Cookies)
Preheat oven to 177 degrees celsius
In large bowl, mix together:
1 cup softened butter
½ cup powdered sugar (icing sugar)
2 teaspoons vanilla extract
Add and blend in:
2 ¼ cup flour
¼ teaspoon salt
¾ cup finely chopped walnuts
Work in flour and salt and nuts into butter/sugar mixture until dough holds together well.
Shape dough into 1 inch balls with your hands or use a medium cookie scoop. Place cookies on a parchment lined baking sheet one inch apart.
Bake cookies for 10-12 minutes until set and very lightly browned. The cookies will be much more tender if they are NOT overbaked.
Look at the bottom of one of the cookies before removing them from the oven and if it's just about golden brown on the bottom they are done!
Cool cookies on a rack for about 10 minutes.
Put at least an inch deep of icing sugar in a flat bottomed pan. (Replenish as necessary.)
Carefully and gently roll and thoroughly coat cookies in icing sugar. Remove cookies and place on parchment.
Let cool for 10 more minutes and then roll thoroughly in icing sugar again. Let cool for another 5-10 minutes and roll in icing sugar again.
Cookies are now ready to eat!
