RECYCLING, SUSTAINABILITY, CLIMATE EMERGENCY are all words that are in front of us every day and we are fortunate to be helped when receiving our weekly copies of “the Friend”. These covers, made from potato starch, have many lives.
I find I am now able to buy all my loose greengroceries using “the Friend” cover (and other similar covers) as bags. What has surprised me is how resistant they are. I expected perhaps one or two uses, but they just go on and on. They are very tough and thank goodness I have been able to reduce all the wasteful plastic and carboard surrounding so many pre-packed items.
They bags are so tough they can take heavy items like potatoes, onions, and of course sprouts, tomatoes, lemons, oranges etc.,
I am truly delighted.
We promised you earlier in the week a recipe to make use of all those lovely local veggies - so here it is!
Amy has been busy in the kitchen again! Here's a video of her making her Vegan Cottage Pie using seasonal local vegetables to make a lovely comforting meal for a family of 5 or 6 ( there's a list of ingredients below so you can get prepared!)
Here's what you need:
Olive oil
2 Onions
2 Garlic cloves
2 Mushrooms chopped small
6 Carrots chopped small
Large floret of Broccoli chopped small
¼ Cabbage
Passata
Basil
Mixed herbs
Smoked paprika or chilli
Splash of red wine or red wine vinegar
Miso or marmite or stock
Water
½-1 packet of frozen Soya mince or 1 tin lentils or both!
seasoning
And for the topping
Potatoes
Oat milk- generous amount as more makes it easier to mash.
