Pumpkin Chocolate Chip Cookies

Ingredients:

Directions:  Preheat oven to 375 degrees.  Mix all of the ingredients above, scoop them onto a cookie sheet lined with parchment paper, and bake for 10-12 minutes.

Pumpkin Pancakes

Ingredients:

Directions:  Preheat griddle to medium heat.  Mix all of the ingredients list above together, and scoop onto griddle to cook until golden brown.  Flip as needed.

Classic Apple Pie

Ingredients:

Directions:  Preheat oven to 400 degrees.  Roll out pie crust and follow the package directions.  In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, lemon zest, and toss to coat evenly.  Lay one pie crust into the bottom of a deep dish pie.  Spoon the apple filling over the bottom crust and discard the juices at the bottom of the bowl.  Place second pie crust over the apple filling.  Use a sharp knife to trim the dough along the outside edge, gently press the seal until all edges are neatly tucked.  Cut 4 slits in the top of the dough to allow steam to vent.  Place pie on a baking sheet.  Brush the surface of the pie crust with the egg wash.   Bake for 55 minutes or until the top is gulden brown and the juices are bubbly.  Cool at room temperature for at least 3 hours before serving.
