Pesto

Hey guys, thanks to those who joined us today. It was a small group of us and we missed you all! Hope all is well with everyone. Here is the pesto recipe:


Kale pesto

1 bunch of kale (stemmed) or 4 cups of any leafy green you have

1/2 cup sunflower seeds (or any seed/nut you'd like to use)

1 or 2 cloves of garlic (depending on the size and your taste)

1 juiced lemon

1/2 cup olive oil

1/2 cup grated parmesan

1/2 teaspoon salt


Pull leaves off of kale stems and roughly chop. Put the kale, sunflower seeds, garlic and lemon in the blender or food processor and pulse on a medium setting. Scrape down sides in between pulses until all is chopped up.

Add olive oil by slowly streaming oil while the blender/processor is on. You are emulsifying the oil to create the paste. Allow oil to emulsify for about a minute or until it forms a paste. Scrape down sides and blend.

Add parmesan cheese and salt. Blend until smooth.


Use pesto on pasta, grilled bread, pizza or whatever you love!
