NPA Level 4
The National Progression Award (NPA) in Bakery at SCQF level 4 develops practical bakery skills in:
craft baking
bread making
cake decoration
pastry making.
This award is aimed at candidates who are interested in pursuing a career in the bakery or catering industries, but do not necessarily have any prior experience.

The course is practical and experiential in nature. This course provides candidates with the opportunity to develop practical bakery skills in 4 assessed units: breadmaking, craft baking, cake decorating and pastry. This course is essentially a practical course where all assessments are conducted on an ongoing basis. Assessment of the 4 units will involve a range of approaches including practical breadmaking and pastry tasks, observations, short response questions and logbooks
The Learning and Teaching will be delivered through a practical, experiential approach supplemented by classroom-based theory lessons and homework. In the main candidates will be assessed on their ability to produce a wide variety of baked produce developing the preparatory skills weighing measuring proving and following recipes and their baking skills and finishing skills decorating and garnishing.
