Lesson 26. Soak It!

As a plant-based food consumer, it's helpful, but not necessary, to have some beans soaking every night (assuming you're going to eat tomorrow!). 

A good rule is to put your beans to soak at night right before going to sleep. Another good rule is to put your beans to soak when you start your morning coffee. It'll cut down on the cook time. If you don’t have time to cook the beans the following day, just store them in water in the frig. Change the water every few days until you have the time to cook.

Red lentils, green aka Mediterranean lentils, and moong beans don't need to be soaked since they're so small. 

No time to cook beans from scratch? Just buy canned beans. Refried beans, frijoles refritos - meaning cooked and mashed, not fried, are even better.
