Lesson 9. How to make plant milks, yogurt, kefir


This lesson will show you how to make plant milks, yogurt, and kefirs from scratch. (From Lesson 13 in eBooklet)

All plant milks are made the same way: 
    Soak 1 cup beans/ nuts / grains in about 8 cups tap water (start with 6 cups, for oats, and add more if you like)
    Grind beans / nuts / grains in a blender until it has consistency of tomato paste 
    Strain the pulverized beans / nuts / grains through a sieve of some kind
    Add 1/4 c sugar, 1 ts vanilla, or almond extract for taste, if you like.
    Drink and refrigerate.

Below are videos lessons on how to make soy, oat, and almond milks. They all involve nearly the same process as outlined above. 

1. Soy milk and yogurt  using probiotics                                          <-- This lesson takes about 3 minutes. There's a demo video at the end.  TOP
        Time to make milk: 50 minutes
        Time to make yogurt: 50 minutes
        Time to soak beans: 12 hours (always have some beans or nuts soaking for your cooking needs)
        Ingredients: 1 cup dried soy beans, 8 cups tap water, 4 dried prunes for yogurt, 4 caplets probiotic called Probiota 12 (all info is in the lesson).
        Optional ingredients: 1/4 cup sugar (or raisins, plums, dates), 1 ts  vanilla or almond extract, pinch of salt. 
        If you have access to Whole Soy Yogurt use 3 teaspoons of that as the yogurt starter instead of probiotic.
        Tools needed: A blender, a strainer, some large bowls or jars, a double boiler.    Time to eat: 90 minutes

        Time to soak beans: 12 hours (always have some beans or nuts soaking for your cooking needs)
        Ingredients: 1 cup dried soy beans, 8 cups tap water, 4 dried prunes for yogurt, several teaspoons of vegan yogurt.
        Optional ingredients: 1/4 cup sugar (or raisins, plums, dates), 1 ts  vanilla or almond extract, pinch of salt. 
        If you have access to Whole Soy Yogurt use 3 teaspoons of that as the yogurt starter instead of probiotic.
        Tools needed: A blender, a strainer, some large bowls or jars, a double boiler.

        Time to make milk: 50 minutes
        Time to make yogurt: 50 minutes
        Time to soak oats: 15 minutes 
        Ingredients: 1 cup old-fashioned oats, 6 cups tap water.
        Optional ingredients: 1/4 cup sugar (or raisins, plums, dates), 1 ts vanilla or almond extract, pinch of salt.
        If you have access to Whole Soy Yogurt use 3 teaspoons of that as the yogurt started instead of the probiotic.
        Tools needed: A blender, a strainer, and some large bowls or jar. 
       
3. Almond milk using probiotics                                                      <-- This lesson takes about 3 minutes. There's a demo video at the end.  TOP
        Time to make milk: 50 minutes
        Time to make yogurt: 50 minutes
        Time to soak nuts: 12 hours (always have some beans or nuts soaking for your cooking needs) 
        Ingredients: 1 cup raw almonds with skin on, 8 cups tap water, 1/4 cup sugar, 4 caplets probiotic called Probiota 12 (all info is in the lesson).
        Optional ingredients: 1 ts  vanilla or almond extract, pinch of salt. 
        If you have access to Whole Soy Yogurt, use 3 teaspoons of that as the yogurt as the yogurt's starter instead of the probiotic.
        Tools needed: A blender, a strainer, some large bowls or jars, a double boiler.
