119 Spice Bases

Everyone has a set of spices that they love whether they know it or not. They are often combinations of spices that you always use in a particular meal. For example, my Italian dishes always have onions, fresh garlic, powder garlic, powder onion, oregano, and salt. My Mexican dishes always have some cumin, red chili, paprika, and salt. My Indian dishes vary depending on the lentils I'm cooking. See my combination of spices below. I call them  "my spice bases". You'll find they're always the very same ingredients depending on the type of dish you're making.

Think about the spices you love and make a list of your spice bases. Keep it simple for now. In this course, you'll be drawing on your personal spice bases in the various recipes you'll be watching. (Of course, you may also copy the spices being used in the recipes.) Keep it simple so you don't get bogged down trying to find the spices being used in the recipes. Just use your own set of spices.

Eventually you'll find yourself looking at some food ingredients like beans, rice, potatoes, salads and you'll say to yourself... "Hmm that will taste great with my Italian Base No. 2".

Task:

In your own notes, jot down at least two spice bases that you enjoy eating with your food. If you have no idea what you like, tell yourself that as well but I'm sure you like salt and maybe even pepper. That's a spice base!
