Faux meat: Meat Loaf

Vegan Meat Loaf

1)  Boca, Morningstar ground crumbles 
    (found in nearly all supermarkets
2) Ground Flax seed (found in Whole Foods, 
    Trader Joe's, Walmart, in vitamin section. If you 
    don't buy organic flax seed, it'll cost you about $3.)

1 tb ground flax seed*
3 tb warm water
½ bag vegan ground crumbles (gives approx. 39 grams of protein in the loaf)
1 medium onion
1 ts red pepper flakes
4 tb olive oil or canola oil
2 ts dried parsley flakes
½ ts black pepper
2 ts salt
1 slice of bread (white or whole wheat)

1. Preheat oven to 350*
2. In a cup, mix 1 tb ground flaxseed with 3 tb warm water and set aside.
3. In a large bowl, allow ½ bag ground crumbles to thaw enough to be able to mix with other ingredients
(microwave lightly if time doesn’t allow for regular thaw)
4. In a frying pan, sauté 1 chopped medium onion and 1 ts red pepper flakes in about 2 tb oil until translucent
5. Mix sautéed onion and red pepper flakes into the bowl with the ground crumbles
6. Add 2 ts dried parsley flakes
7. Add 1/2 ts black pepper
8. Add 2 ts salt
9. Wet 1 slice of bread and kneed into the crumbles mixture
10. Mix in 2 tb oil to make moist
11. Place crumbles mixture on greased cookie sheet
12. Mold into a log with your hands
13. Spread tomato paste on top (or vegan tomato soup or crushed tomatoes)
14. Pop into oven for about 45 minutes

Optional ingredients:
Sauteed mushrooms, carrots, green peppers.

Serve with:
Mashed potatoes, frozen peas, or spaghetti

Ketchup, hot sauce, hot red pepper flakes, soy sauce, Worcester sauce.
