Stuffed Peppers with Faux Meat

Vegan Stuffed Green Peppers


1 tb ground flaxseed with 3 tb warm water (this is your egg-replacer)*
3 medium sized green peppers for 3 people (costs about $2.50) (Pick peppers that can stand on one end)
1 cup cooked white rice (or brown rice, millet, quinoa)
1 medium onion, chopped
6 oz vegan grounds*
1/8 tsp black pepper
1 tsp salt
3 tablespoons dried or fresh parsley flakes
1 tablespoon minced onion
3 tablespoons canola or olive oil

Optional ingredients

1 tablespoon Worcestershire sauce, fresh or powdered garlic, 1 tablespoon Italian seasonings, 1 teaspoon red chilies, 8-oz can crushed tomatoes, or 8 oz can tomato soup.

Time to complete about 45 minutes

Directions for cooking 
  1. Preheat oven to 375*
  2. In a cup, mix 1 tablespoon ground flaxseed with 3 tablespoons warm water and set aside
  3. Wash peppers, cut tops off set aside
  4. In a frying pan fry one medium onion chopped in 2 tablespoons of your favorite oil
  5. When onions are light brown, add your seasonings and the salt, pepper, parsley, minced onion
  6. Fry lightly
  7. Add vegan grounds and fry until crumbly (add oil if needed).
  8. Add in 1 cup cooked rice and stir
  9. Taste mixture now and adjust seasonings according to your specific tastes. (You can do this because there’s no uncooked meat or eggs in the recipe.)
  10. Divide ground mixture into three sections in the frying pan
  11. Scoop mixture into peppers
  12. Arrange green peppers on a greased cookie sheet
  13. Drizzle with oil if you like (You can afford the oil because plant-based diets don’t have a lot of the extraneous fat that comes in meat and dairy products.)
  14. Optional: Pour crushed tomatoes or (vegan) tomato soup over the peppers
  15. Bake in oven at 385* for about 30 minutes
*Uncommon ingredients:

Ground Flaxseed is sold as a vitamin supplement (in pharmacy section of many stores) and as a food item depending on the store. I have seen it in Walmart, Trader Joe’s, Whole Foods. If your store doesn’t carry it, print out the “Please carry this in our store” page and ask them to order “Ground Flaxseed”.
