Baby Lima Bean Soup - Great St. Patrick's Day dish

This lunch or dinner for four people costs about $3 and has about 56 grams of protein.

Time-to-eat using the various cooking methods (see How to Cook Beans and Legumes to understand): 

Stove top - not soaked: 180 min   Stove top - soaked: 90 min  Slow Cooker: 240 minutes Pressure Cooker: 50 min
(For quick meals, consider using a pressure cooker and have some beans soaking at all times.)


Ingredients                                     Optional ingredients
 16 oz. dried baby lima beans (1 bag at the store)     Red chilies 
 1/4 medium cabbage, diced                       Lemon juice
 1 large onion, chopped                             2 inches fresh ginger, diced
 6 cups boiling tap water
 1 teaspoon cumin seeds 
 7 oz crushed canned tomatoes
 4 tablespoons oil

Step-by-step directions

1 Measure, sift, and rinse beans.

2 Stove top, not-soaked method: In a large pot, cook beans with about 4 cups water 
   for about 180 minutes or until mushy. Monitor water content along the way.

   Stove top, soaked method: In a large pot, cook beans with about 4 cups water for 
   about 120 minutes or until mushy. Monitor water content along the way.
   
   Slow cooker method: In a SC (aka crock pot), cook beans with about 6 cups water 
   for about four hours or overnight. Monitor water content along the way.

   Pressure cooker method: In a PC, cook beans with about 4 cups water for about 
   40  minutes or until mushy. Because it's in a pressure cooker, you cannot monitor water 
   content along the way.

3 The secret to having dried beans mushy enough is to NOT introduce any other ingredients 
   into the beans until they are fully cooked. Adding any ingredients other than water into 
   your beans will stop them from becoming mushy no matter how long you cook them.

4 In a frying pan, fry the chopped onion with some oil until translucent. Add the cumin seeds. 
   Fry a little more because oil disseminates the taste. Add chopped cabbage and any optional 
   ingredients. Cook until limp.

5 Add tomatoes to fried mixture and bring to boil.

6 Add fried mixture with tomatoes to the cooked beans.

7 Adjust water, salt, and lemon taste and serve hot.

This meal would go well with whole wheat rolls
