Black gram: High protein fry-ems - dosa batter

Dosa batter - not fermented

This snack or meal accompaniment costs about $0.50 and has about 28 grams of protein.

Time-to-eat by cooking on the stove top is 15 minutes.

1 cup black gram (urid dal or matpe dal) flour        
1/2 teaspoon salt                                                    
(optional) 1/2 teaspoon Eno Fruit Salt (it's like Alka-Seltzer)

Other optional Ingredients                                   
Finely chopped medium onion 
Finely chopped green chili 
Finely chopped green peppers

Step-by-step directions

1 Pre-heat muffin pan.

2 In a bowl, mix 1 cup of black gram (urid dal or matpe dal) flour with 1 cup of tap water
   until consistency of toothpaste or a little looser.

3 Add 1/2 ts salt. Keep stirring until all lumps mixed in.

4 Add optional chopped green chilies or jalapeno chilies. Stir into mix.

5 Pour 1 ts oil into muffin spots. Pour about 1 ts of dosa mix into muffin spots.

6 Turn dosas over when brown using a bamboo stick or fork.

7 Serve dosa balls once brown on both sides. Check inside balls to make sure batter is
   completely cooked. Adjust salt after first ball is done. Adjust heat on muffin pan once
   you see the results of your first balls.

8 If you want the dosa balls to be a little more airy, add 1/2 ts Eno fruit salt and mix well
   into batter.

9 Serve hot or store in frig and send in lunch box.

This meal would go well with Chutney or Indian pickles or maple syrup.
