Sweets: Chocolate cookies

This vegan chocolate cookie this recipe is from ShowMeTheCurry. I adapted it a little. It's easy and extremely delicious. These cookies freeze and microwave well. Makes about 30 cookies in about 75 minutes including prep time.
30 tablespoons canola or vegetable oil
1.5 cups confectioner’s sugar
2/3 cup brown sugar
3 teaspoons vanilla extract
8 tablespoons almond, coconut, soy, rice, or hemp milk (add more to manage batter)
3 cups whole wheat flour
6 tablespoons cocoa powder or carob powder (chocolate substitute)
2 teaspoons salt (add more for taste)
3 teaspoons baking powder
1/2 cup chopped nuts - if you like
2 tablespoons regular sugar
1.    Pre-heat oven to 300 degrees F.
2.    In a large bowl, combine the oil, confectioner’s sugar, and brown sugar.
3.    Mix till creamy.
4.    Add vanilla extract, mix together, set aside.
5.    In a separate bowl, sift the dry ingredients together and then mix
a.    Whole wheat flour
b.    Cocoa powder
c.    Baking powder
6.    Pour the dry ingredients into the wet mixture and stir together until fully incorporated. Add more milk as needed to manage the batter. 
7.    Add nuts to batter if you like them.
8.    Taste the batter now and adjust it according to your taste.
(No need to worry about it being raw because there are no eggs in it!)
9.    Grease some cookie sheets with vegetable or canola oil.
10. Scoop out lime-sized balls of dough with a spoon size you like leaving about 2” between dough balls.
11.  Put 2 tablespoons regular sugar into a saucer and take a jar or glass and dip it into the sugar and then press the dough balls down leaving a sugary top .
12. Do this for all cookies.
13. Put into oven for about 15 minutes. (Time in oven depends on your oven.) Check the first cookie sheet of cookies regularly so you learn how long you really need bake the remaining cookie sheets. 
14. Freeze any remaining cookies and microwave them later for snacks.
Vegan chocolate cookies are the ones on the outer edge. Vegan oatmeal and raisin cookies in the middle.
