Vegan donuts with coconut-lemon whipped cream...... 
From "The Oh She Glows Cookbook"

3/4 cup of oat flour
1/2 cup of chia seeds
1 1/2 tsp of baking powder
1/4 tsp sea salt
1/4 tsp ground cinnamon
1/3 cup maple syrup
1/3 cup of non dairy milk
1 tsp vanilla
Coconut lemon whipped cream
1 can full fat coconut milk
1 to 2 tbsp of sweetener
1/2 tsp of pure vanilla extract

Erik Markle's vegan lunch: Vegan chkn tenders and rudabago w/mushrooms, onions and habeneros!! 


Erik Markle's steamy dish: Skin on fresh mashed rudabago, topped with red pepper hummus (store bought) and sautéed mushroom medley. (Just a dollop of hummus to add a little tang to the occasional bite if mash.... The whole dish actually worked really well.

Robert Bellow's recipe: The only thing raw so far about my eating habits is my cooking skills. Here is tonight's dinner. Vegan Whole Wheat Spaghetti Bolognese and Kale Salad. Instead of 3 different dead animals, I sautéed big mushroom pieces, onion, celery and garlic and added to the organic marinara sauce. Added Nate's Meatless Meatballs. Yum, Cruelty Free. Clear Conscience...and Almond Ice Cream...for dessert.


Erik Markle: Today's lunch. Homefries (cooked in sea-salt and vegan butter). Topped with fried onions, tofu and jalapeño peppers.


Erik Markle: Triple cooked vegan beef with veggie fried rice..


Erik Markle: Simple lunch.... Brussel sprouts sautéed in vegan butter, sea salt and crushed garlic, with butter, garlic mashed potatoes...



Erik Markle: This is today's 'whatever I could find in the fridge' lunch creation....sea salt roasted potatoes and tofu on a bed of red lentils, green peas and black beans.... Gotta admit it is good (and beyond healthy).... Man when I finally overcome my demons I'll be something awesome!!!! Cecilia di Prima (this was really tasty)
