Main research topics:

Foods, necessary to provide energy and maintain a good state of health, are a source of functional molecules important for the prevention of diseases onset and progression of degenerative states that can result in real diseases. The research of this group is aimed to the study of foods with high nutritional value, such as blueberries, pomegranates, kiwifruits, olive and seed oils, goji berries, strawberries, saffron and many others, using traditional and advanced methodologies. In this way, it is possible to highlight the most interesting compounds responsible for foods healthy properties.
The research is carried out through the study of the food metabolic profile using untargeted methodologies such as Nuclear Resonance spectroscopy (NMR), which allows to obtain the overall profile of the metabolites (metabolomics) present in the samples and targeted methodologies (HPLC-DAD, GC, colorimetry, UV spectrophotometry -vis etc.), used specifically for selected classes of compounds.
The proposed analytical protocol, together with suitable chemometric methods, allowed the characterization of different foodstuffs in terms of geographical origin, variety, genuineness and production technology and highlighted the presence of molecules of high biological interest that can be tested to evaluate the possible properties for disease prevention.

Perkin Elmer HPLC with DAD, UV and Fl detectors, Perkin Elmer UV-vis spectrophotometer and X-Rite colorimeter; Automated Microwave Biotage Initiator equipped with IR sensor for temperature control (Laboratory 108). The research group also has access to the NMR instrumentations of the Magnetic Resonance Laboratory “Annalaura Segre” of the Institute of Chemical Methodologies (CNR, Roe) :Bruker Spectrometer Avance600 for NMR in solution and for HRMAS analyses; Bruker Spectrometer Avance400 for NMR in solid phase; Portable unilateral NMR instrument from Bruker Biospin, Aachen, Germany; SpinMaster 2000 relaxometer at variable frequency (10-80 MHz) equipped with a temperature control unit.
