Our traditional breads are loved for their firm but light texture and for their thick, tasty crust. Cooked potatoes are used as natural preservatives in the whole wheat and rye breads. They not only extend freshness and prevent drying, but also add great texture and taste. This method was widely used, especially on the Great Plains of Hungary and in Transylvania.
