A place where I share recipes I often give to friends.  Those of you who know me know that I'm on a crazy diet.  More on that later.


Almond/Olive Bread


2 1/2 c. blanched almond flour (Whole Foods)
1/4 - 1/3 c. melted butter
1 c. dry curd cottage cheese - press down as you measure  (farmers cheese)  (Whole Foods)
1 t baking soda
1/4 t salt (I use a whole t)
3 eggs
handfull olives (optional) I like pitted kalamata olives (went to check the spelling on the jar and just had to eat one.  OK two.  Yummmm!)
handful of grated Parmesan cheese (optional)

350 degrees
blend everything but flour.  Add flour slowly until you think your mixer might break.  Stop before it does.  ( I learned this the hard way)

It will be goopier than you think it should be.   Somewhere between bread and cake batter.

place  into greased loaf pan.

bake for about 1 hr (some times a little more).  Use clean knife test.  Cool 5 - 10 min, remove from pan and cool on rack.
