Lemon Bars

posted Jun 19, 2014, 7:10 PM by Unknown user   [ updated Jun 19, 2014, 7:10 PM by Unknown user ]

  • Crust
  • 4 large eggs, beaten lightly
  • 1-1/3 cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons finely-grated lemon zest (from two large lemons)
  • 2/3 cup freshly-squeezed lemon juice, strained
  • 1/3 cup whole milk
  • 1/8 teaspoon salt
  • Powdered (confectioner's) sugar to decorate finished lemon bars

Preheat oven to 350 degrees F.  Adjust oven rack to middle position.

Prepare Crust and bake.

While crust is baking, make the Lemon Filling: In a medium bowl, whisk together eggs, sugar, and flour; stir in lemon zest, lemon juice, milk, and salt to blend well. Pour mixture onto top of the baked warm crust. You may set the prepared Lemon Filling aside until crust is finished baking. When ready to pour on warm crust, re-blend Lemon Filling mixture and pour into the warm crust.

Bake for 20 minutes, or until the filling feels firm when touched lightly. Remove from oven and transfer the pan to a wire cooling rack and cool for 30 minutes.

After cooling, grasp the parchment paper and carefully lift the bars onto a cutting board. Cut into serving size squares or bars. To cut the bars, don't make a sawing motion with your knife, instead make long, clean cuts the length of the pan. Wipe the knife clean by dipping it in hot water and wiping with a clean kitchen towel to dry between cuts.

about 2 dozen bars.

Nutella Pie

Nutella Pie

  • 1-1/2 cups finely ground chocolate cookie crumbs
  • 5 to 8 Tbs. unsalted butter, melted
For the filling
  • 2 cups Nutella
  • 1-1/2 cups mascarpone cheese
  • 1/4 tsp. table salt
For the topping
  • 1/2 cup chopped toasted hazelnuts
  1. Preheat the oven to 350°F.
  2. Crumble the cookies into the work bowl of a food processor and process until finely ground. Alternatively, you can put them in a bag and whack them with a rolling pin until finely crushed. Pour the butter into the crumbs and mix (hands are best for this) until the butter is fully incorporated and the texture is that of wet sand. Firmly press the crumbs against the sides of a 9-inch pie pan, then against the bottom of the pan (the underside of a measuring cup works well for smoothing the bottom crust). Chill the crust for at least 15 minutes to help prevent it from crumbling when serving.
  3. Bake the crust for 10 minutes, or until fragrant. Remove it and allow it to cool before filling.

  4. In a large bowl, using a hand mixer, or in the bowl of a stand mixer fitted with the whisk attachment, beat together the Nutella, mascarpone, and salt until light and fluffy. Spread the filling into the pie shell, cover it with plastic wrap, and refrigerate until firm, about 1 hour.
  5. Top the pie with the chopped nuts, slice the pie, and serve.

  • 2 liters (8 cups) milk (preferably full cream
  • 1 can condensed milk
  • 1 cup milk powder
  • 4 tbsp sugar (optional-use only if you want it a little more sweet)
  • 1/4 nutmeg powdered
  • 10 to 12 cardamom pods, powdered
  • saffron (optional)
  • pistachios, crushed (for garnishing)

  1. In a heavy bottomed pot or pan, mix in the milk, condensed milk and milk powder and cook on low heat for about 35 to 40 minutes, stirring in between to prevent sticking, until the mixture thickens and caramelizes and gets that lovely kulfi flavour.
  2. In a small bowl pour a ladle of the mixture and mix in the cardamom and nutmeg and make a smooth paste. Sir in the paste into the kulfi mixture. If used directly the cardamom forms lumps which makes it difficult to disintegrate into a homogenous mixture

  3.  Allow to cool and pour into Kulfi moulds. If you do not have kulfi moulds, pour into shot glasses and when the mixture is half frozen, about 30 minutes, insert a stick into it. Chill overnight or for 6 to 8 hours.  enjoy!

  4. Put glass in the fridge

Hi my name is Sayuri and this is my blog. So, I decided to go a little mainstream and create something almost all the hipsters have heard of. Cake Pops. :(I just can't believe hipster is a real word, I feel bad for humanity) These make eating easier than it already is and make creating even more fun than it is to make a real cake. Let's do this.

Cheese Cake Balls:

  • 1/4 teaspoons salt
  • 3 eggs
  • 24 small wooden dowels
  • 10 ounces white confectioner's icing
  • 3 (8 ounces) softened packages cream cheese
  • 3/4 cup sugar
  • 1/3 cup sour cream
  • 3 tablespoon all purpose flour
  • 1 teaspoon vanilla extract

  1. Preheat oven to 350 degrees F
  2. Beat cream cheese and sugar in a large bowl until smooth. Mix in the sour cream and blend. Add the flour vanilla and salt and mix. Add the eggs one by one, blending thoroughly before add in the next egg. Pour mixture into a 9 inch spring form pan.
  3. Bake for 50 minutes or until golden. Cool for 1 hour.  Then refrigerate for 3 - 8 hours.
  4. Use a cookie scoop (small) to run balls of cheese. Circularize them into  1 1/2 inch balls and place on a cooking sheet or  oiled baking pan. Push wooden dowel into each cake ball. Place cooking tray in freezer for 30 -60 minutes.
  5. Melt the white confectioner's coating. Dip each cake pop into the icing. Place on wax paper until coating sets. Refrigerate  until servable.

Try and spot how many times I wrote "ball". TEE HEE.

Hi, my name is Sayuri and this is my blog. Ok, so I checked, and now it's official, THE HEAT IS COMING! So I thought let's get back on track with some super easy home-made Jell-o! Did you know that Gelatin Dessert used to be called "Calf's Foot Jelly" because of the main ingredient being the Gelatin extracted from the foot of the Calf.

Gelatin Dessert:
  • 10 packs of unflavoured gelatin (2 per layer)
  • 10 different fruit pulps (Grape, Mango, Strawberry, Banana,)
  • 1/3 water (1/3 per layer)
1.Get a pot and pour two packs of gelatin along with you pulp and stir at medium heat for 5 minutes slowly adding your water. Stir until all of the little white chunks are gone.
2. Put in your Jell-o mold and then into the fridge.(for 5 hours)
3.Then repeat this process for each and every one of your other pulps.
4. After all of the gelatins have "hardened" stack them.

I know, I know, that was really short. So let's make this a double!

Ice Cream Cookie Sandwiches (chocolate):
Cookie Ingredients:
  • 2 1/4 cups of all purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup packed light brown sugar
  • 1 teaspoon salt
  • 1 teaspoons pure vanilla extract
  • 1 large eggs
  • 2 cups of semi sweet and/or chocolate chips
  • 1/2 cup granulated sugar
Cookie Directions:
1. Preheat oven to 350 degress
1. In a bowl, add flour and baking soda, then whisk.
3. In a larger bowl, using an electric mixer add butter, light brown sugar, granulated sugar. Slowly add the salt, vanilla and eggs.
4. After all ingredients of bowl 2 are mixed, mix in the powder mixture and chocolate chips until combined as one.
5.Make small dollops of cookie on a buttered/oiled/greased baking sheet.(small enough so that there is and even amount of cookies)
6. Bake for 8-10 minutes
7. Put in fridge.

(You can buy the ice cream if you don't have an ice cream maker)
Ice Cream directions (vanilla):

  • 2 cups heavy whipping cream
  • 2 cups half cream
  • 3/4 cups of white granulated sugar
  • 1 tablespoon of vanilla extract
1. In a large bowl, add the heavy whipping cream, and half cream, then mix well.
2.Slowly add in white sugar and vanilla.(blend well)
3.Keep in fridge covered for 3 hours or until VERY cold.
4. Pour into ice cream maker. Freeze for however long you do with your specific ice cream maker.
5. Freeze in freezer for an hour.

Ice Cream Cookies:

  • Chocolate Cookies(even amount)
  • Vanilla Ice Cream

1.Remove Ice Cream and Cookies from fridge.(Heating the cookies first is optional)
2. Take two cookies, place a tablespoon of ice cream in the middle of one, and sandwich them together.
3.Do this until all cookies are sandwiched.

(You don't have to use the flavours that I chose!)

Hi, my name is Sayuri and this is my blog. Okay, so I think we can all agree that winter is never going to end, BUT THAT DOESN'T MEAN WE CANT PRETEND! So this week I was really missing summer, tropical fruits, and ice cream, so I decided to make frozen yoghurt! Frozen yoghurt is delicious, healthy, and very easy to make, so this blog may be short. HERE WE GO!:

Mango Frozen Yoghurt:
  • 1 cup mango slices or mango pulp
  • 1 cup  Greek yoghurt
  • 1 tablespoon honey
  • raspberries (preferably frozen)

1. Set blender on purée and add mango
2. Remove liquid from mango by straining it
3.Remove liquid from Greek yoghurt by straining it
4.Put yoghurt, mango and honey in blender and set on purée
5. Put purée in large container and then in freezer for 8 hours
6. Serve with frozen raspberries

I am sooo sorry this was sooo short! I had "stuff to do". But to make up for my laziness here's a joke: Wow, it is sooo cold. This is so torturous it feels like HELL, except hell is warmer! HAHAHAHAH! I am sooo amazingly funny.
