Oatmeal Chocolate Chip Cookies                                                                                   

3/4 cup butter melted                                                    1 cup brown sugar                                                      1 egg

½ cup of sugar                                                                 1/4  cup water                                                              1 teaspoon of vanilla

3 cups quick oats                                                             1 cup flour                                                                    1 teaspoon of salt

1/2 teaspoon of baking soda                                        3/4 cup chocolate chips

Preheat oven to 350.  Beat butter, sugars, egg, water and vanilla until combined.  Add remaining ingredients and mix well.  Drop spoonfuls of dough onto baking sheet.  Bake for 10 to 12 minutes until golden brown.  Let cool slightly and remove from pan.  Enjoy!

·         2 eggs

·         1 ½  cups white sugar

·         1/2 cup vegetable oil

·         2 teaspoons vanilla extract

·         2 cups apples, peeled and diced

·         2 cups all-purpose flour

·         1 1/2 teaspoons salt

·         1 teaspoon baking powder

·         1/2 teaspoon ground cinnamon, or more to taste


  1. Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  2. Beat eggs, sugar, vegetable oil, and vanilla extract in a mixing bowl; add apples.
  3. Mix flour, salt, baking powder, and cinnamon in a separate bowl; add to apple mixture and stir just until evenly combined into a thick batter. Pour batter into the prepared loaf pan.
  4. Bake in the preheated oven for 45 minutes. Cover loaf pan with aluminum foil; continue baking until a toothpick inserted into the center comes out clean, about 15 minutes more. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

Apple Brownies

1/2 cup butter                    1 cup sugar                        1 egg                        3 apples peeled, cored and thinly sliced

1 cup flour            1/4 teaspoon of salt                1/2 teaspoon baking powder                   1/2 teaspoon baking soda                1 teaspoon cinnamon

Preheat oven to 350.  Grease 9 x 9 pan.  In large bowl beat together butter, sugar and egg.  Add apples.  Mix well.  Add flour, salt, baking powder, baking soda and cinnamon.  Mix well.  Spread into baking pan.  Bake 35 minutes.  Enjoy and eat!

Cowboy Cookies

2 cups flour             1 teaspoon baking soda            1/2 teaspoon salt                1 cup melted butter

1/2 cup sugar              2 eggs                 2 cups oats                    1 1/2 teaspoon of vanilla                 1 1/2 cups brown sugar

shredded coconut optional

Cream butter and sugars together.  Add eggs, flour, salt and baking soda.  Add vanilla, oats, chocolate chips and coconut if using.

  Mix well.  Drop by tablespoon onto cookie sheet.  Bake at 350 for 15 minutes.                                     

On Thursday, we made a no crust pumpkin pie.  I asked the kids to try to remember the steps to making pie.  The result is the video below.  They are amazing movie stars.  The real recipe is below the video.

No Crust Pumpkin Pie

2 ½ cups of cooked and mashed fresh pumpkin

1 tablespoon of cornstarch

1 teaspoon of cinnamon                                                  1/8 cup molasses

½ teaspoon of salt                                                              1 ½ tablespoon melted butter

1 ½ cup milk                                                                                    1 cup sugar

2 eggs


Add eggs, melted butter, molasses, milk, pumpkin and beat until smooth.  Add sugar, cornstarch, salt and cinnamon.  Mix until well blended.  Pour into greased pie plate and bake in a preheated oven for 1 hour or until done.  350 degree oven

On Thursday, January 18th, we made playdough!  We made a red batch and a yellow batch.  Here is our recipe.

In one bowl put in 2 cups of flour, 1 cup of salt and 4 teaspoons of cream of tartar.

Microwave 2 cups of water in glass measuring cup or mug and add 2 tablespoons of vegetable oil and food coloring.

Mix until well combined.

Pour the water mixture into the flour mixture and mix together.  Knead for a couple of minutes.  Cool and use.
