While you are in Scotland

These are day trips from Edinburgh that can be completed using public transport. There are also many tours giving day or longer trips from Edinburgh you can try.

Excursion to North Berwick
Train from Waverley Station to North Berwick - enjoy East Lothian scenery. Visit
Scottish Seabird Centre and take a boat trip from there to Bass Rock (gannet colony), Isle of May (terns) or the Fife shore. See Tantalon Castle, https://www.historicenvironment.scot/visit-a-place/places/tantallon-castle/, which you should also visit if you can (short taxi or about 1 hour walk along cliffs). You can then walk back along the John Muir trail, as far as you like, perhaps to Aberlady via the beach and even to Longniddry, and then catch a bus back to Edinburgh, or return to Edinburgh by train.

Excursion to Dundee or St Andrews
From Waverley station just over one hour to Dundee, or about an hour to Luechars where a short bus ride takes you to St Andrews.
In Dundee, enjoy the Silvery Tay, see Shackleton's Discovery https://www.rrsdiscovery.com, admire the nearly finished art gallery https://www.vandadundee.org and explore the town's rich history built on jute.
In St Andrews admire the Old Course, home of golf, https://en.wikipedia.org/wiki/Old_Course_at_St_Andrews, walk the beaches made famous by Chariots of Fire and visit the oldest university in Scotland, founded in 1410.
