Best-Ever Banana Bread

1 1/4 cups sugar
1/2 cup butter ( I used Coconut Oil)
2 eggs
1 1/2 cup mashed very ripe bananas ( 3-4 medium)
1/2 cup buttermilk
1 tsp. vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp. salt.
1 cup chopped nuts ( optional)

1. Heat over to 350 degrees F. Grease only the bottoms of 2- 8"x4"  loaf pans or 1 -9"x5" loaf pan.

2. In large bowl mix sugar and butter.  Add eggs, bananas, buttermilk and vanilla; bear with electric mixer on medium speed until smooth.  Stir in flour, baking soda, salt and nuts just until moistened.  Pour 
    batter into pans.

3. Bake 8" loaves for 1 hour or 9" loaf for 1 hr. 15 min., or until toothpick insterted in center comes out clean.  Cool 10 min.  Loosen sides of loaves from pans; remove from pans to cooling rack.  Cool about 1
     hour before slicing. 

* High altitude ( 3500-6500ft.) increase flour to 2 3/4 cups.  Heat over to 375 degrees and add 1/4 cup water with the buttermilk.  Bake 8" loaves for 65 min. and 9" loaf for 1 1/2 hrs.
