After much frustration and debate (with myself) over how to properly and efficiently display processing sketches and share the code I have finally decided on a decision. We are going to be using openprocessing.org and create a collection that will house all of the example sketches produced by myself, my students and others that have helped with the creation of this site. Through Openprocessing a user may simultaneously view the code, the program visually and also be able to play with the code to see what happens when a certain line is removed or something is added. Users can also make "tweaks" to the code to save their own flavor of the sketch while retaining the original.
