Vegetable Frittata

Vegetable Frittata Recipe 




 2 tbsp ghee

 4 eggs

 1/2 onion, chopped

 1 zucchini, sliced thin

 1/2 bell pepper

 1 clove garlic, crushed

 1/2 cup shredded cheddar cheese (optional)

 salt and pepper to taste



  1. Melt ghee in an oven safe 9-inch frying pan.
  2. Add onion, zucchini and peppers and saute until vegetables are tender.
  3. Spread the vegetables evenly along the bottom of the pan.
  4. Whisk together eggs, garlic and cheese. Pour egg mixture over the vegetables and cook on low heat until egg begins to set.
  5. Place pan in a preheated 400*/200*C oven and bake until firm to touch and the top is a golden brown.
  6. Cut into wedges and serve.
