Cheddar Cheese Biscuits

Cheddar Cheese Biscuits
Adapted from "Lose the wheat, lose the weight!"

Makes 8 Biscuits
Prep Time :10 Minutes  Total Time: 20 Minutes

1 cup almond meal/flour  
  1 cup ground golden flax seeds      
1 1/2 tsp baking soda
3/4 tsp onion powder
1/2 tsp sea salt
4 tbsp cold butter, cut into cubes
  4 egg whites
1/2 cup shredded sharp cheddar cheese (Dr. Knox recommends shredding your own and if you can't, make sure there is no cellulose in the ingredient list.)

1) Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

2) In a bowl, mix together the almond/meal flour, flax seeds, baking soda, sea salt and onion powder. Cut in the butter until combined. Stir in the cheddar.

3) In a small bowl, beat the egg whites with a hand mixer until soft peaks form. Gently fold the egg whites into the dry ingredients until combined.

4) Spoon the dough into 8 rounds on the baking sheet. Flatten to approximately 3/4" thickness.

5) Bake for 15 minutes, or until golden brown.
