Key Lime Pie

 
KEY LIME PIE

Pie Crust                                   Filling                            Garnish

1 C Macadamia Nuts                   ¾ C Lime Juice              Limes Slices

1 C Pecans                                ½ C honey                    Raspberries

6 pitted Dates                            ¼ C Coconut Milk           Mint Sprigs

                                                   ½ tsp Vanilla Extract                  1 C Avocado

                                                     Pinch of salt                            2 tsp Vanilla Extract

               Pinch of salt

                ½ C Coconut Oil


Place dates in food processor and process until they become a paste. Add nuts and remaining ingredients and process until crumbly.

 

Pat the mixture down into spring form pan and up the sides creating a thick crust (Can alternatively be placed into sheet pans and serve squares)

Blend filling ingredients in blender until smooth. Pour into piecrust. Place in freezer and freeze for 3 hours.

 

When you are ready to serve, remove from freezer and let sit for 1 hour before serving to soften. Slice and serve. Garish if desired.

 

**You may freeze this pie and keep it for up to 1 month in the freezer. Always cool for 1 hour before serving.
