Introduction

The Sanitary Food Transportation Act requires all shippers, carriers, and receivers of temperature controlled food to make sure the food is maintained in conditions that are safe and sanitary. The carrier has to follow the shippers' requirements for trailer condition, washout requirements, and temperature settings. 

Failure to follow the shippers' requirements can allow the receiver to refuse the entire load. It may also result in fines and other penalties from the Food & Drug Administration. Completing this training course insures that you understand the basics of handling food safely. It also insures that you understand your responsibilities and the requirements for handling a load of temperature controlled food.
