Jamaican Fries

2 sweet potatoes, large
oil
Jamaican Jerk spice

Peel two large orange-fleshed sweet potatoes carefully. Cut into thin julienned strips.
Heat oil until a test strip cooks appropriately. (The potatoes are denser than white potatoes so adjust heat accordingly.)
Cook the fries until golden brown.
Remove and drain.
Generously sprinkle with Jamaican Jerk spice and serve.
