Chocolate Ice Cream

Prep Time:  40 min (+ overnight chilling) ~  Freeze Time:  35 - 40 min

  • 4 C coconut milk creamer (2 small cartons)
  • 1/2 C powdered cocoa
  • 1-1/4 C sugar
  • 1/2 tsp salt
  • 3 Tb arrowroot powder

Mix creamer, cocoa, sugar, salt and arrowroot in blender until smooth.  Pour into large saucepan and cook over medium heat until mixture begins to thicken and coat a spoon.
Mixture will thicken as it cools.
Cool to room temperature; chill in refrigerator overnight.
Mixture will be like a thin pudding.

Start ice cream maker. With blades moving, pour chilled mixture into ice creamer until ready, about 35 to 40 minutes.
Mixture will be like soft serve; for a firmer texture, allow to freeze.  To easily scoop ice cream from freezer container, microwave a few seconds prior to scooping.
