Butter Cookies



From the kitchen of: D. MADISON*

Preparation time: 20 MINUTES
Number of servings: 4-6 DOZEN

INGREDIENTS


  • 2 CUPS SOFTENED BUTTER

  • 2 1/2 CUPS SIFTED CONFECTIONER’S SUGAR

  • 4 CUPS ALL PURPOSE FLOUR

  • 1 TBSP VANILLA EXTRACT

 

INSTRUCTIONS


Cream butter and add confectioner’s sugar, then cream again.

Beat in vanilla extract and flour.

Roll 1" balls (or rounded tablespoons) of cookie dough and place on ungreased baking sheets.

Flatten cookies with index and middle fingers.

Bake in a 375 degree electric oven for 5-7 minutes or in a 400 degree gas oven for 8-10 minutes. Remove from oven and let cool on cookie rack.

Corn Bread Dressing

Preparation time: 30 Minutes
Number of servings: 8-10

INGREDIENTS


  • 1 Cup Chopped Celery

  • 1 Cup Chopped Green Pepper

  • 1/2 Cup (1 Stick) Butter

  • 1 Pan Corn Bread (Cooled & Crumbled, about 6 Cups)

  • 4-6 Chopped Boiled Eggs

  • 1 13 3/4 ounce Can Chicken Broth

  • 2 Eggs Beaten

  • 2 tsp. Poultry Seasoning

  • 1 tsp. Ground Sage (May add an additional 1/2 teaspoon if desired)

  • 1/4 tsp Salt

  • 1/8 tsp Black Pepper

  • 6 Chicken Legs (Boiled & Shredded)

  • 6 Chicken Thighs (Boiled & Shredded)

  • Garlic Powder (to taste)

  • Onion Powder (to taste)

INSTRUCTIONS


Heat oven to 350 degrees.

Saute’ Celery and Green Pepper in Chicken Broth until tender.

Combine with remaining ingredients, toss until bread is thoroughly moistened.

Bake 40 to 45 minutes, Stir half way through baking time.

Baked Beans

Preparation time: 7 Minutes
Number of servings: 6-8

INGREDIENTS


  • 1 can of Bush's Vegetarian Beans (28oz.)

  • 1 can pineapple chunks, 20oz. (drain half of the juice or use all if you like a sweeter taste)

  • 1/2 cup red onion diced (very small) (use more or less to your liking)

  • 1/2 cup Brown Sugar (add more or less to your liking)

  • 1 teaspoon of Cinnamon

  • 3 teaspoons of Black Pepper (add more or less to your liking)

INSTRUCTIONS

Combine all ingredients and bake for 30 minutes at 350 degrees.

 

Banana Bread with Nut Topping

Preparation time: 15 minutes

Number of servings: 8-10


INGREDIENTS


  • 1 1/3                Cups of Wheat Flour


  • 3                      Ripe Bananas


  • 2                      Eggs


  • ¼                   Cup of Milk


  • 6                      Tablespoons of Butter


  • 1                      Cup of Sugar


  • ¾                    tsp. Salt


  • ½                    tsp. Baking Soda


  • ¼                    tsp. Baking Powder


  • 2                      tsp. Vanilla Extract


  • ¼                    Cup of Chopped Walnuts or Pecans


Vanilla Frosting
                      

 INSTRUCTIONS

Preheat oven to 350 degrees.  Line the bottom of a loaf Pan with wax paper and coat
with a cooking spray.  Whisk together the following:


The Wheat Flour


Salt


Baking soda


Baking powder

In a large bowl beat the following for about 2 minutes:


 Butter


 Sugar

Lightly beat the eggs and the vanilla extract and then add them to the mixture.
Add the flour mixture to the butter and sugar until completely blended.


Fold in the mashed bananas.

 Pour the batter into the pan and sprinkle the chopped nuts on top.  Bake until a toothpick inserted in the center comes out clean.  Should be done in about 55 to 60 minutes.  Brush on some melted butter.  Cool for about 15 minutes and remove from the pan and let cool completely. Then top with vanilla frosting (Betty Crocker or Pillsbury or make your own) and the nuts and enjoy.
