First Remove:
The first remove will be the "Winter Storage Remove".  Our store houses were filled in the fall and we are preparing our menu in order to make room for the spring season and the new fresh bounty to come, therefore this remove will consist of:
  • Breads of an assortment. These will be made from the grains available in our storage houses.
  • Sweet and savory butters to add flavour to the grains in our breads.
  • Winter soup to warm you.  This soup is a combination of our winter stores of vegetables mostly root vegetables that must be used before the spring arrives.
  • An assortment of preserves.  Jellies made from our wine reserves, pates from our meat reserves, pickled grapes, etc.
  • Roasted root vegetables from our storage.  A mixture of the abundance we have survived on throughout this long cold season.
  • Chickents.  The time has come to renew our hens for the spring laying.
  • Savory tarts.  Warm and comforting to please those who perhaps avoid meat at this time.
  • Poached pears.  What else did you expect from this Baroness' stores?  She always has a supply of this most requested preserve served with a creme anglaise of course.
 
 
Second Remove:
The second remove will be a celebration of the coming spring.  This remove will consist of:
  • Fresh biscuits.  Warm, full of new cheeses and herbs served with the freshest Normandy butter.
  • Salat of fresh spring cuttings with a light Normandy style dressing
  • Warm pork and apple savory pies, filled with apples and fresh herbs.
  • Beef roasted in sweet red wine.  We are confident spring is arriving and a new season is beginning.
  • Peas with mint.  The earliest of our spring herbs is showing itself to our delight so we will add this to our sweet peas.  There will be other vegetables to marry with this dish (I just have not thought of them yet).
  • Blance Mange.  A delight served with berries in a coulis.
There may be other items added to this feast at the whims of the Baroness and of course Her Excellency TSivia's asking.
