Gluten Free Zuchini Loaf

1 cup sugar ½ cup oil
2 eggs 2 cups shredded zucchini
2 tsp vanilla
1 ½ cup rice flour ½ tsp baking soda
½ tsp baking powder ½ tsp salt
½ tsp cinnamon 1 cup chopped walnuts or pecans
¾ cup chopped maraschino cherries

Cream sugar and oil together. Beat in eggs. Mix in zucchini and vanilla.
In a 2-cup measuring cup, mix dry ingredients together (except for nuts and cherries).
Add to wet mixture and mix well. Stir in nuts and cherries.
Bake in a greased loaf pan at 350 degrees F. for 50 minutes or until done.
Cool for ten minutes, then remove from pan and continue to cool.
