Beat
the egg with a whisk or fork until it is well-blended.
Take
a
tablespoon of the hot liquid, blow on it several times to cool
it off.
Drip
the now-cooled off liquid slowly into
the beaten egg, while
simultaneously beating the egg as the liquid is being dripped into it.
Repeat this step a second
time with
another spoonful of hot liquid --
cool it off and then drip slowly into egg while continuing to beat the
egg.
Hold the bowl of egg and
liquid
mixture over the pan of hot liquid and
slowly pour it into the liquid while stirring vigorously.
