Ingredients: 1 cup apple sauce or puree
1/4 cup lard and 1/4 cup of butter
1/2 cup unrefined organic sugar
2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
2 eggs
3 grated carrots
1/4 cups nuts, chopped
1/4 cup raisins
1/8 cup grated pineapple
1 tablespoon grated coconut
Instructions: Blend together sugar and fats and
then stir in apple puree.
Mix other
dry ingredients, flour, baking soda and cream of tartar. Blend into
apple-sugar-lard puree. Stir in carrots, nuts, raisins, pineapple and
coconut. Pour into 9x13 pan.
Bake until a toothpick comes out mostly clean (this is moist cake so it
should not get completely clean/dry.)

Frosting
1 cup cultured heavy or double cream
1 tsp vanilla
1 Tablespoon honey
Mix all together and spread on cake.
