Champagne is named after the Champagne region of France – the name is legally protected, so only sparkling wine produced in its namesake region can use it. This is the reason that winemakers in Alsace produce “Cremant”, Spain produces “Cava” and the Italians call their sparkling wine “Asti”. The grapes used for Billecart-Salmon Champagne are grown in the house’s own vineyard, unlike the bought-in grapes of some larger houses, contributing to the singularity of their Champagne. Their collection includes Billecart-Salmon Brut Reserve, one of the finest but least known Grand Marque champagnes. A blend of Chardonnay, Pinot Noir and Pinot Meunier, the wine id fresh, lively and elegant. Billecart-Salmon also produces delicate, fruity Brut Rose champagne, perfect as an accompaniment to salmon, sushi or desert with red fruits.
