"Askoudes". The unique characteristic of this olive is that it looses its bitter taste alone, while still on the olive tree, without requiring further processing. By the time they mature they are light brown in color. To mature it is important that the climate is humid and within specific temperature ranges: the harvest of "askoudes" is not the same as that of the other greek olives but follows with the appropriate climate conditions. "Askoudes" are produced only in Naxos.
