Cranberry Kumquat Chutney

Cranberry Kumquat Chutney

3/4 cup brown sugar
1 12oz package fresh cranberries
8 oz kumquats, cut into 1/4 inch slices, seeded
1/3 cup onion, finely chopped
2 tablespoons fresh ginger, minced
1 garlic clove, minced
1 teaspoon yellow mustard
1 cinnamon stick
1/4 teaspoon salt
dash of red pepper flakes

Place all of the ingredients in a heavy bottom pot. Bring mixture to a boil. Reduce heat and simmer until the mixture starts to thicken, about 30 minutes. Cool to room temperature. Discard cinnamon stick.
