Simple Home Fries


1 tablespoon butter
1 large russet potato, peeled and chopped
Salt, to taste
Pepper, to taste

In a non-stick saute pan, melt the butter over medium heat.  Add the chopped potatoes and stir gently to coat in the melted butter.  Reduce the heat slightly and cover the pan.  Cook for 10 minutes, stirring occasionally.  Remove the cover from the pan and cook an additional 5 minutes.  Season with salt and pepper, to taste, and serve immediately or keep warm in a preheated 200°F oven until ready to serve.
