Pan-Fried Chorizo with Caramelized Onions over Mashed Potatoes


Caramelized onions, reheated if necessary
1 teaspoon extra virgin olive oil
2 links chorizo
Mashed potatoes (either made fresh, or reheated leftovers)

If you're not using leftover caramelized onions and need to make them from scratch, start with those. Do the same if you're making the mashed potatoes from scratch. If you have already prepared caramelized onions and mashed potatoes, then proceed with the next step.

Heat olive oil in a large skillet over medium heat. Cook the chorizo for 10 minutes, rotating the links to ensure even browning. Once the the casing has started to crisp up, remove the links from the pan and pull the pan off the heat. Slice the links into 1/2-inch pieces. Return the slices to the pan and put the pan back on the heat. Cook the chorizo for 5 minutes. Turn the pieces over and cook another 5 minutes. Drain the chorizo on a plate lined with paper towels to remove some of the excess oil.

Create a bed of mashed potatoes on each of two plates. Divide the chorizo into two portions and layer the pieces on top of the mashed potatoes. Top with warm caramelized onions and serve!
